Puis les chemiser de sucre semoule.<\/span><\/p>\n\n\n\n<p class=\"MsoNormal has-normal-font-size\"><span style=\"font-family: Arial; color: black;\">Couper 160 g de chocolat amer \u00e0 70% \u00e0 l\u2019aide d\u2019un couteau. Mettre les morceaux de chocolat dans un saladier, plac\u00e9 ce dernier dans un large po\u00ealon contenant de l\u2019eau \u00e0 peine fr\u00e9missante. Une astuce: disposer un papier sulfuris\u00e9 avec quelques encoches au fond du po\u00ealon pour \u00e9viter les \u00e9claboussures. Et laisser fondre le chocolat tout en m\u00e9langeant \u00e0 l\u2019aide d\u2019une spatule. Le chocolat doit \u00eatre \u00e0 45-50\u00b0C.<\/span><\/p>\n\n\n\n<p class=\"MsoNormal has-normal-font-size\"><span style=\"font-family: Arial; color: black;\">Porter 5 cl de lait \u00e0 \u00e9bullition dans une casserole. A la premi\u00e8re \u00e9bullition, retirer la casserole de la plaque de cuisson.<\/span><\/p>\n\n\n\n<p class=\"MsoNormal has-normal-font-size\"><span style=\"font-family: Arial; color: black;\">Une astuce: Avant de verser le lait dans la casserole, passer cette derni\u00e8re sous l\u2019eau froide, la retourner, ne pas l\u2019essuyer. L\u2019astuce d\u2019humecter la casserole \u00e9vite au lait de coller aux parois et au fond.<\/span><\/p>\n\n\n\n<p class=\"MsoNormal has-normal-font-size\"><span style=\"font-family: Arial; color: black;\">Incorporer ensuite successivement 30 g de sucre semoule au chocolat fondu chaud tout en m\u00e9langeant \u00e0 l\u2019aide d\u2019une spatule, le lait bien chaud, et 4 jaunes d\u2019oeuf.<\/span><\/p>\n\n\n\n<p class=\"MsoNormal has-normal-font-size\"><span style=\"font-family: Arial; color: black;\">Fouetter d\u00e9licatement 4 blancs d\u2019oeuf dans un saladier. Lorsque ils sont mi-mont\u00e9s, y incorporer petit \u00e0 petit 30 g de sucre semoule. Ces blancs doivent \u00eatre bien lisses.<\/span><\/p>\n\n\n\n<p class=\"MsoNormal has-normal-font-size\"><span style=\"font-family: Arial; color: black;\">Pr\u00e9chauffer le four \u00e0 200\u00b0C.<\/span><\/p>\n\n\n\n<p class=\"MsoNormal has-normal-font-size\"><span style=\"font-family: Arial; color: black;\">Incorporer, \u00e0 l\u2019aide d\u2019une spatule, successivement \u00e0 la pr\u00e9paration chocolat\u00e9e 35 g de cacao en poudre, 1\/3 des blancs, m\u00e9langer d\u00e9licatement, d\u00e9tendre l\u2019appareil, puis incorporer le reste des blancs.<\/span><\/p>\n\n\n\n<p class=\"MsoNormal has-normal-font-size\"><span style=\"font-family: Arial; color: black;\">Garnir les barquettes beurr\u00e9es et sucr\u00e9es de cet appareil \u00e0 souffl\u00e9.
