Ensacher les baies de geni\u00e8vre dans une fine mousseline. Ramollir le saindoux \u00e0 la spatule de bois. <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">Tapisser le fond d&rsquo;une grande cocotte avec la moiti\u00e9 des couennes (le c\u00f4t\u00e9 gras doit \u00eatre en contact avec le fond de la cocotte pour emp\u00eacher la choucroute de br\u00fbler) et tartiner les parois avec le saindoux ramolli. <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">Mettre la moiti\u00e9 de la choucroute dans la cocotte, ajouter les oignons, les carottes, le bouquet garni, les baies de geni\u00e8vre, la palette ne porc et le lard, mettre le reste de la choucroute, verser le vin blanc et mouiller \u00e0 peine \u00e0 hauteur avec de l&rsquo;eau ou du bouillon, couvrir avec le reste des couennes et porter \u00e0 \u00e9bullition. <\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Arial;\">Laisser cuire tr\u00e8s doucement de 3 heures \u00bd \u00e0 4 heures.
