\u00e9pices,<\/span><\/li>\n<li><span style=\"font-family: Arial;\">2 oignons,<\/span><\/li>\n<li><span style=\"font-family: Arial;\">1 carotte,<\/span><\/li>\n<li><span style=\"font-family: Arial;\">6 gousses d\u2019ail,<\/span><\/li>\n<li><span style=\"font-family: Arial;\">1 bouquet garni,<\/span><\/li>\n<li><span style=\"font-family: Arial;\">2 cuiller\u00e9es \u00e0 soupe d\u2019huile d\u2019arachide,<\/span><\/li>\n<li><span style=\"font-family: Arial;\">3 cuiller\u00e9es \u00e0 soupe de miel,<\/span><\/li>\n<li><span style=\"font-family: Arial;\">3 cuiller\u00e9es \u00e0 soupe de vinaigre de vin,<\/span><\/li>\n<li><span style=\"font-family: Arial;\">20 gr de gros sel,<\/span><\/li>\n<li><span style=\"font-family: Arial;\">Sel, poivre.\u00a0<\/span><\/li>\n<\/ul>\n<p><!--more-->D\u00e9sosser le carr\u00e9, garder les os.<\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">La veille, \u00e9craser les grains de coriandre, et ajouter la sauge hach\u00e9e, \u00e9plucher et tailler la moiti\u00e9 des gousses d\u2019ail en b\u00e2tonnets, piquer le carr\u00e9, introduire une pinc\u00e9e du m\u00e9lange sauge\/coriandre dans les fentes avec l\u2019ail.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">Frotter le r\u00f4ti avec le gros sel, le thym le romarin et 1 cuill\u00e8re \u00e0 caf\u00e9 de 4 \u00e9pices, envelopper dans un film alimentaire, r\u00e9server au r\u00e9frig\u00e9rateur.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">Le lendemain, essuyer le r\u00f4ti et laisser 20 min \u00e0 temp\u00e9rature ambiante.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">Pr\u00e9chauffer le four th 6 (180\u00b0).<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">Chauffer l\u2019huile dans une cocotte, faire revenir le r\u00f4ti sur toutes les faces, ajouter les os concass\u00e9s, a<\/span><span style=\"font-family: Arial;\">jouter les oignons et la carotte \u00e9minc\u00e9s, le bouquet garni, les gousses d\u2019ail restantes,<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">Couvrir et enfourner 1 h 30 en retournant le carr\u00e9 toutes les 20 min.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">Sortir la cocotte du four et passer \u00e0 th 9 (270\u00b0).<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">M\u00e9langer le miel, le vinaigre le reste de 4 \u00e9pices, badigeonner le r\u00f4ti et remettre au four 15 min.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">Recueillir le jus de cuisson, d\u00e9couper et servir avec
