color: black;\">Sel et poivre du moulin.<\/span><\/li>\n<\/ul>\n<p><!--more-->Foncer 1 moule \u00e0 tarte de 20 cm de diam\u00e8tre, de pr\u00e9f\u00e9rence avec un fond amovible, d\u2019une abaisse de p\u00e2te \u00e0 foncer ou bris\u00e9e.<\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Entreposer le moule 20 minutes au r\u00e9frig\u00e9rateur afin de raffermir la p\u00e2te avant de la pr\u00e9 cuire.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Pr\u00e9chauffer le four \u00e0 200\u00b0C, en position ventil\u00e9e.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Chemiser le fond de tarte froid d\u2019une feuille d\u2019aluminium, y disposer des petits poids, puis l\u2019enfourner \u00e0 200\u00b0C et le cuire 15 minutes.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Faire fondre sur feu doux 400 g de rillettes du Mans dans une casserole, tout en remuant d\u00e9licatement avec une spatule en bois afin de ne pas briser les morceaux de viande.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Lorsque la graisse est fondue, mettre le tout dans une passoire et laisser \u00e9goutter, remuer r\u00e9guli\u00e8rement afin que la graisse s\u2019\u00e9coule.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Pr\u00e9parer l\u2019appareil \u00e0 tarte : <\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Battre 2 \u0153ufs avec 2 jaunes d\u2019\u0153uf, incorporer ensuite \u00e0 l\u2019aide d\u2019un fouet 25 cl de cr\u00e8me liquide, 1\/4 de litre de lait, saler tr\u00e8s l\u00e9g\u00e8rement, poivrer, ajouter quelques r\u00e2p\u00e9es de noix de muscade, 1 cuill\u00e8re \u00e0 soupe d\u2019estragon concass\u00e9 et 1 cuill\u00e8re \u00e0 soupe de ciboulette cisel\u00e9e finement.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Ajouter ensuite les rillettes \u00e9goutt\u00e9es, m\u00e9langer d\u00e9licatement \u00e0 l\u2019aide d\u2019une spatule en bois afin de ne pas casser les morceaux de viande.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Garnir le fond de tarte pr\u00e9cuit de l\u2019appareil, puis le glisser dans le four \u00e0 200\u00b0C, baisser la temp\u00e9rature \u00e0 180\u00b0C et compter 25 minutes de cuisson.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;
