Disposer 4 tournedos de porc, ajouter 1 brindille de thym frais et 2 gousses d\u2019ail en chemise, les cuire sur feu doux une dizaine de minutes sur chaque face, en les arrosant r\u00e9guli\u00e8rement de la graisse de cuisson. Puis les r\u00e9server sur une grille, les saler et les poivrer, retirer \u00e9galement la brindille de thym et les gousses d\u2019ail du po\u00ealon. Puis faire juste chauffer 4 tranches de jambon de pays dans la po\u00eale de cuisson des tournedos, les froisser l\u00e9g\u00e8rement puis les disposer sur les tournedos. D\u00e9graisser ensuite la po\u00eale, faire caram\u00e9liser les sucs, puis d\u00e9glacer avec 1 verre de vin de Madiran, d\u00e9coller les sucs avec une cuill\u00e8re, porter \u00e0 fr\u00e9missement et laisser r\u00e9duire de moiti\u00e9. Incorporer ensuite 20 g de beurre bien froid coup\u00e9 en petits morceaux, r\u00e9server hors du feu. <br><\/span><\/p>\n\n\n\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">R\u00e9chauffer rapidement les tournedos recouverts de jambon sous le gril du four. Dresser les haricots tarbais \u00e9goutt\u00e9s avec la garniture aromatique dans un po\u00ealon, r\u00e9chauffer sur feu doux si n\u00e9cessaire.
