Piquer l\u2019oignon d\u20191 clou de girofle, fendre les gousses en 2 et les d\u00e9germer. Nettoyer \u00bd c\u0153ur de c\u00e9leri branche et le ficeler.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Plonger les morceaux d\u2019\u00e9paule d\u2019agneau dans une grande casserole remplie d\u2019eau, saler et porter \u00e0 \u00e9bullition. Retirer l\u2019\u00e9cume qui se forme \u00e0 la surface, ajouter les carottes, l\u2019oignon piqu\u00e9, le c\u00e9leri, les gousses d\u2019ail, 1 bouquet garni, saler, 8 grains de poivre noir et laisser cuire 1h00 \u00e0 fr\u00e9missement en \u00e9cumant r\u00e9guli\u00e8rement. La cuisson termin\u00e9e, laisser la viande reposer dans le bouillon pendant 1h00 \u00e0 temp\u00e9rature ambiante.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Pr\u00e9parer une sauce B\u00e9chamel: Pr\u00e9lever 1 litre du bouillon de cuisson de la blanquette d\u2019agneau et le laisser refroidir. Faire fondre 60 g de beurre dans une casserole. Ajouter ensuite, hors du feu, 60 g de farine, en m\u00e9langeant bien avec un fouet. Remettre la casserole sur feu tr\u00e8s doux, chauffer pendant 3 minutes, puis r\u00e9server hors du feu. Commencer par d\u00e9layer le roux chaud avec 1\/3 du litre de bouillon froid, chauffer sur feu doux, puis incorporer le reste petit \u00e0 petit tout en fouettant pour \u00e9viter la formation de grumeaux. Porter \u00e0 fr\u00e9missement et laisser cuire 5 \u00e0 6 minutes en fouettant sans cesse.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">\u00c9queuter 200 g de feuilles d\u2019oseille, bien les laver, les \u00e9goutter. Conserver 4 \u00e0 5 feuilles pour le d\u00e9cor.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Mixer la sauce B\u00e9chamel avec les feuilles d\u2019oseille dans le bol d\u2019un mixeur. Incorporer ensuite 1 dl de cr\u00e8me liquide, rectifier \u00e9ventuellement l\u2019assaisonnement. Transvaser cette sauce \u00e0 l\u2019oseille dans une cocotte. Pr\u00e9lever les morceaux d\u2019agneau du bouillon de cuisson, les disposer dans la cocotte et maintenir au chaud sans laisser bouillir.
