Peler 8 gousses d\u2019ail, les fendre en 2 et les d\u00e9germer.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Saler et poivrer 1 \u00e9paule d\u2019agneau (non d\u00e9soss\u00e9e) de chaque c\u00f4t\u00e9. Chauffer 2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive dans un po\u00ealon. Puis disposer et faire colorer l\u2019\u00e9paule d\u2019agneau sur toutes les faces. Ajouter la garniture aromatique tout autour, l\u2019arroser d\u2019un filet d\u2019huile d\u2019olive, la saler, la laisser colorer \u00e9galement en remuant avec une spatule en bois. Ajouter ensuite 1 bouquet garni, et 4 tomates pr\u00e9alablement lav\u00e9es et coup\u00e9es en quartier tout autour de l\u2019\u00e9paule. Mouiller avec 1 litre de vin blanc sec, porter \u00e0 \u00e9bullition, puis recouvrir d\u2019une feuille d\u2019aluminium, glisser le po\u00ealon dans le four et compter 2h00 de cuisson \u00e0 160-170\u00b0C tout en arrosant l\u2019\u00e9paule d\u2019agneau toutes les 15 minutes.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Faire une papillote: Placer 24 gousses d\u2019ail en chemise sur une des moiti\u00e9s d\u2019une feuille d\u2019aluminium, les arroser d\u2019un filet d\u2019huile d\u2019olive, disposer dessus 1 petit bouquet de thym frais, puis rabattre l\u2019autre moiti\u00e9 dessus et bien fermer la papillote. Poser ensuite cette papillote dans une cocotte, ajouter de l\u2019eau \u00e0 mi-hauteur, porter \u00e0 fr\u00e9missement, couvrir et laisser cuire 1h00. La cuisson termin\u00e9e, ouvrir la papillote, retirer la peau des gousses d\u2019ail, r\u00e9cup\u00e9rer la pulpe et l\u2019\u00e9craser \u00e0 la fourchette afin d\u2019obtenir une pur\u00e9e d\u2019ail.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Faire toaster 4 tranches de pain baguette. Puis les tartiner de pur\u00e9e d\u2019ail. Arroser ces petits toasts d\u2019ail d\u2019un filet d\u2019huile d\u2019olive, les assaisonner avec quelques grains de fleurs de sel et du poivre du moulin.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Apr\u00e8s 2h00 de cuisson, l\u2019\u00e9paule d\u2019agneau est pr\u00eate \u00e0 \u00eatre d\u00e9guster, disposer harmonieusement les petits cro\u00fbtons d\u2019ail tout autour.
