color: black;\">8 gousses d\u2019ail<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">4 brindilles de thym<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">1 cuill\u00e8re \u00e0 soupe de cerfeuil hach\u00e9<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">120 g de beurre<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">1 dl de fond de veau<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">3 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">Sel fin, fleur de sel et poivre du moulin<\/span><\/li>\n<\/ul>\n<p><!--more-->Ficeler 1 quasi de veau de 1 kg, puis le saler et le poivrer.<\/p>\n<p><span style=\"font-family: Arial; color: black;\">Chauffer 3 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive avec 70 g de beurre dans une grande cocotte.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">D\u00e9s que le beurre est fondu, disposer d\u00e9licatement le quasi de veau et le colorer sur toutes les faces, tout en l\u2019arrosant fr\u00e9quemment, puis le d\u00e9barrasser sur une grille.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Pr\u00e9chauffer le four \u00e0 170\u00b0C.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Dans le po\u00ealon qui a servi \u00e0 la cuisson du quasi de veau, faire revenir 150 g de lardons de poitrine fum\u00e9e avec 8 gousses d\u2019ail non pel\u00e9es sur feu doux, ajouter 600 g de petites pommes de terre nouvelles pr\u00e9alablement lav\u00e9es, remettre le quasi de veau, ajouter 4 brindilles de thym, 200 g de tomates cerises pr\u00e9alablement lav\u00e9es.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Ajouter 3 cuill\u00e8res \u00e0 soupe de beurre coup\u00e9 en petits morceaux, parsemer la garniture de fleur de sel, verser 1 dl de fond de veau ou \u00e0 d\u00e9faut d\u2019eau, couvrir et glisser dans le four 40 minutes \u00e0 170\u00b0C, arroser toutes les 10 minutes.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Au terme de la cuisson, le quasi de veau est cuit, les pommes de terre confites, les gousses d\u2019ail bien moelleuses.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;
