Coupez l&rsquo;\u00e9paule en cubes de 5 centim\u00e8tres de c\u00f4t\u00e9. \u00c9mincez finement le zeste de 2 citrons verts, puis pelez les 4 citrons verts \u00e0 vif, \u00e9mincez les tr\u00e8s finement et r\u00e9cup\u00e9rez-en les quartiers.<\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Dans une cocotte contenant du beurre, fa\u00eetes revenir les morceaux d&rsquo;\u00e9paule sans toutefois laisser prendre une coloration. Salez et poivrez.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Jetez la graisse de cuisson et remettez les morceaux d&rsquo;\u00e9paule de veau dans la cocotte. Saupoudrez l&rsquo;ensemble de farine et laissez cuire 1 \u00e0 2 minutes.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Pressez le jus des citrons jaunes, versez le tout sur les morceaux d&rsquo;\u00e9paule, ainsi que le vin blanc, et laissez cuire \u00e0 feu tr\u00e8s doux pendant une trentaine de minutes.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Clarifiez les oeufs, salez, poivrez et incorporez-les aux 250 g de cr\u00e8me fra\u00eeche en fouettant \u00e9nergiquement l&rsquo;ensemble.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Incorporez la pr\u00e9paration au saut\u00e9 de veau tout en remuant. Donnez un tr\u00e8s l\u00e9ger bouillon.
