Pr\u00e9chauffer le four \u00e0 180\u00b0C.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Chauffer 2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive dans une cocotte. Saler et poivrer 4 cuisses de lapin sur chaque face. Puis les disposer dans la cocotte et les colorer de chaque c\u00f4t\u00e9. Ajouter 3 brindilles de thym frais et les gousses d\u2019ail.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Lorsque les cuisses de lapin sont dor\u00e9es, les recouvrir d\u2019huile d\u2019olive et chauffer. D\u00e9s que l\u2019huile commence \u00e0 fr\u00e9mir, couvrir la cocotte et la glisser dans le four. Baisser la temp\u00e9rature du four \u00e0 140\u00b0C et compter 1h30 de cuisson.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Peler 1 oignon moyen et le couper en petits d\u00e9s d\u2019\u00bd cm. Peler 1 gousse d\u2019ail, la fendre en 2, la d\u00e9germer et la hacher finement. Peler 500 g de petites aubergines, et les couper en d\u00e9s d\u20191 cm. Monder 4 tomates, puis les fendre en 4, les \u00e9p\u00e9piner et couper la pulpe en petits d\u00e9s d\u2019\u00bd cm. Effiler 1 branche de c\u00e9leri, et la couper en petits morceaux d\u2019\u00bd cm \u00e9galement. D\u00e9noyauter 50 g d\u2019olives ni\u00e7oises en les coupant en \u00e9clats.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Pr\u00e9parer une caponata : Chauffer 2 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive dans un po\u00ealon et faire suer les d\u00e9s d\u2019oignon avec la gousse d\u2019ail hach\u00e9e. Ajouter ensuite les d\u00e9s d\u2019aubergine et 2 bonnes cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive, faire suer \u00e9galement. Puis ajouter les d\u00e9s de tomates et de c\u00e9leri, saler, poivrer g\u00e9n\u00e9reusement, bien m\u00e9langer, couvrir et laisser cuire 20 minutes \u00e0 feu doux.
