Ces morceaux doivent \u00eatre minces, pas plus d\u20191cm d\u2019\u00e9paisseur.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial;\">\u00c9plucher 1 poign\u00e9e de haricot vert extra-fin et les laver. Peler 2 carottes et 1 navet, puis les couper en b\u00e2tonnets. Cuire ces l\u00e9gumes et 2 poign\u00e9es de petits pois \u00e9coss\u00e9s, s\u00e9par\u00e9ment de pr\u00e9f\u00e9rence, \u00e0 l\u2019anglaise (eau bouillante sal\u00e9e), et compter 3 minutes de cuisson environ. Lorsque les l\u00e9gumes sont cuits, les pr\u00e9lever \u00e0 l\u2019aide d\u2019une \u00e9cumoire, les plonger dans de l\u2019eau bien froide additionn\u00e9e de quelques gla\u00e7ons, les \u00e9goutter et les rassembler.<br \/>\n<\/span><\/p>\n<p><span style=\"font-size: 10pt; font-family: Arial;\">Chauffer 2 cuill\u00e8res \u00e0 soupe d\u2019huile de p\u00e9pins de raisins dans un po\u00ealon de pr\u00e9sentation. Saler et poivrer les morceaux de lapin. Lorsque l\u2019huile est bien chaude, faire sauter et l\u00e9g\u00e8rement colorer les morceaux de lapin. Ajouter et chauffer 1 gousse d\u2019ail non pel\u00e9e et \u00e9cras\u00e9e avec la paume de la main, 1 pinc\u00e9e de feuilles de sarriette, 16 olives noires \u00e0 l\u2019huile d\u00e9noyaut\u00e9es, les l\u00e9gumes bien \u00e9goutt\u00e9s, saler, poivrer, et bien m\u00e9langer.
