Conserver les filets mignons et les rognons, couper ces derniers en deux.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Peler et \u00e9mincer 1 petite \u00e9chalote.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Parsemer quelques pinc\u00e9es de sel fin sur le fond d&rsquo;un plat creux, y verser la moiti\u00e9 pour commencer d&rsquo;1 verre de vin blanc sec, disposer les filets de lapin et les rognons, ajouter l&rsquo;\u00e9chalote \u00e9minc\u00e9e, 1 gousse d&rsquo;ail en chemise \u00e9cras\u00e9e, 1 brindille de thym, 1 brin de romarin, 5 graines de coriandre \u00e9cras\u00e9es, le reste du verre de vin blanc, une pinc\u00e9e de sel fin, 1 filet d&rsquo;huile d&rsquo;olive et quelques tours de moulin \u00e0 poivre.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Laisser mariner le r\u00e2ble de lapin 30 minutes minimum \u00e0 temp\u00e9rature ambiante, ou 3 \u00e0 4 heures au r\u00e9frig\u00e9rateur recouvert d&rsquo;un film alimentaire. Apr\u00e8s 30 minutes, \u00e9goutter les morceaux de lapin et r\u00e9cup\u00e9rer la marinade.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Nettoyer 1 courgette, la couper en petits d\u00e9s de 5 mm. Laver 50 g de petites sommit\u00e9s de chou-fleur.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Chauffer 1 filet d&rsquo;huile d&rsquo;olive dans un po\u00ealon, ajouter les sommit\u00e9s de chou-fleur, bien les enrober de la mati\u00e8re grasse \u00e0 l&rsquo;aide d&rsquo;une cuill\u00e8re \u00e0 soupe, ajouter ensuite 50 g de f\u00e8ves \u00e9coss\u00e9es et pel\u00e9es, les petits d\u00e9s de courgette, 10 olives ni\u00e7oises et 1 pinc\u00e9e de sucre semoule, bien m\u00e9langer.
