{"id":279,"date":"2017-03-11T15:55:06","date_gmt":"2017-03-11T14:55:06","guid":{"rendered":"http:\/\/faugeron.net\/poulet-saute-aux-champignons"},"modified":"2017-03-08T18:58:43","modified_gmt":"2017-03-08T17:58:43","slug":"poulet-saute-aux-champignons","status":"publish","type":"post","link":"https:\/\/faugeron.net\/?p=279","title":{"rendered":"Poulet saut\u00e9 aux champignons"},"content":{"rendered":"<p><span style=\"font-family: Arial;\">Pour 4 personnes <\/span><\/p>\n<ul>\n<li><span style=\"font-family: Arial; color: black;\">1 poulet fermier <\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">16 lardons de poitrine sal\u00e9e<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">350 g de champignons de Paris<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">16 oignons grelots<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">1 cuill\u00e8re \u00e0 soupe de persil plat concass\u00e9<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">1 bouquet garni<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">1 cuill\u00e8re \u00e0 soupe de beurre<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">2 dl de cr\u00e8me liquide<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">2 cuill\u00e8res \u00e0 soupe d\u2019huile de p\u00e9pins de raisins<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">30 cl de vin blanc sec<\/span><\/li>\n<li><span style=\"font-family: Arial; color: black;\">Sel et poivre du moulin<\/span><\/li>\n<\/ul>\n<p><!--more-->Demander \u00e0 son volailler de couper 1 poulet en 8 morceaux.<\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Couper le bout terreux de 350 g de champignons de Paris, les laver plusieurs fois mais rapidement \u00e0 l\u2019eau froide, puis les couper en 4.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Saler et poivrer les morceaux de poulet sur chaque face. Chauffer 2 cuill\u00e8res \u00e0 soupe d\u2019huile de p\u00e9pins de raisins avec 1 cuill\u00e8re \u00e0 soupe de beurre.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Chauffer les morceaux de poulet, les colorer sur chaque face en commen\u00e7ant par le c\u00f4t\u00e9 peau. Lorsque ces morceaux de poulet sont color\u00e9s, les d\u00e9barrasser dans une cocotte.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Faire colorer dans le po\u00ealon de cuisson 16 lardons de poitrine sal\u00e9e et 16 oignons grelots. D\u00e9s que les lardons sont color\u00e9s, les retirer du po\u00ealon et les mettre dans la cocotte. Et lorsque les oignons commencent \u00e0 colorer, ajouter les champignons de Paris, les laisser dorer, puis d\u00e9barrasser le tout dans la cocotte.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">D\u00e9glacer le po\u00ealon avec 30 cl de vin blanc sec, d\u00e9coller tous les sucs des parois avec une spatule en bois, et donner une bonne \u00e9bullition. Verser ensuite ce vin sur les morceaux de poulet et la garniture dans la cocotte, porter \u00e0 fr\u00e9missement, ajouter 1 bouquet garni couvrir et laisser mijoter pendant 40 minutes \u00e0 petits fr\u00e9missements.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Apr\u00e8s 40 minutes de cuisson, verser 2 dl de cr\u00e8me liquide dans la cocotte. Laisser r\u00e9duire 3 \u00e0 4 minutes.
