Peler 2 gousses d\u2019ail, les d\u00e9germer et les hacher finement.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Mettre dans une cocotte: 1 petite cuill\u00e8re \u00e0 soupe de sel fin, ajouter les oignons et les gousses d\u2019ail hach\u00e9s, 1 bonne cuill\u00e8re \u00e0 soupe de pluches de persil plat concass\u00e9es, 2 cuill\u00e8res \u00e0 soupe de pluches de coriandre concass\u00e9es, 2 cuill\u00e8res \u00e0 caf\u00e9 de piment rouge doux en poudre, 1 cuill\u00e8re \u00e0 caf\u00e9 de cumin en poudre, 6 ou 7 pistils de safran, et 4 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive, mouiller avec 2 dl d\u2019eau, et bien m\u00e9langer \u00e0 l\u2019aide d\u2019une spatule en bois. Disposer ensuite les morceaux de poulet dans la cocotte, porter \u00e0 fr\u00e9missement et laisser cuire \u00e0 couvert 30 minutes.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Pr\u00e9chauffer le four en position gril. Apr\u00e8s 30 minutes de cuisson, disposer les morceaux de poulet dans un plat allant au four sans les chevaucher, les arroser d\u20191 filet d\u2019huile d\u2019olive. Puis glisser le plat sous le gril du four et faire dorer les morceaux de poulet.<br \/>\n<\/span><\/p>\n<p><span style=\"font-family: Arial; color: black;\">Couper 1 citron jaune confit en 4. Laisser r\u00e9duire la sauce de cuisson du poulet dans la cocotte afin d\u2019obtenir une sauce savoureuse. Puis hors du feu, ajouter les quartiers de citron confit, une vingtaine d\u2019olives taillad\u00e9es, couvrir, laisser infuser ces morceaux de citron et r\u00e9chauffer les olives. Disposer ensuite les morceaux de citron sur les morceaux de poulet bien dor\u00e9s, et verser la sauce dessus.
