Monder 2 tomates moyennes, puis les fendre en 4, retirer les graines et couper la pulpe en petits d\u00e9s.<\/span><strong><span style=\"font-family: Arial; color: black;\"><br \/>\n<\/span><\/strong><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Mouiller les cuisses de lapin avec 3 dl de vin blanc sec et 1 dl de bouillon de volaille, elles doivent \u00eatre compl\u00e8tement immerg\u00e9es. Ajouter les \u00e9chalotes, les gousses d\u2019ail, 1 brindille de thym frais et 1 feuille de laurier, couvrir, porter \u00e0 fr\u00e9missement et laisser mijoter pendant 2 heures.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Faire tremper 5 feuilles de g\u00e9latine dans de l\u2019eau froide, les laisser ramollir 1 \u00e0 3 heures.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Apr\u00e8s 2 heures de cuisson, retirer les cuisses de lapin de la cocotte et les effilocher, conserver le bouillon de cuisson dans la cocotte, mais \u00e9liminer toute la garniture.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Les 5 feuilles de g\u00e9latine sont ramollies, les presser d\u00e9licatement avec les mains. Le bouillon de cuisson est chaud, incorporer sur feu \u00e9teint, ces feuilles de g\u00e9latine et les dissoudre tout en m\u00e9langeant bien avec un fouet.<br \/>\n<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">M\u00e9langer d\u00e9licatement la chair de lapin avec les d\u00e9s de tomate, 2 cuill\u00e8res \u00e0 soupe de persil plat concass\u00e9 et 2 cuill\u00e8res \u00e0 soupe de cerfeuil concass\u00e9, rectifier \u00e9ventuellement l\u2019assaisonnement (sel et poivre du moulin).<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Garnir une petite terrine de cette pr\u00e9paration. Verser ensuite successivement dessus 2 louches de bouillon ti\u00e8de, puis 2 cuill\u00e8res \u00e0 soupe de kirsch, puis compl\u00e9ter \u00e0 hauteur de bouillon.<\/span><\/p>\n<p class=\"MsoNormal\"><span style=\"font-family: Arial; color: black;\">Recouvrir cette terrine d\u2019un film alimentaire, et l\u2019entreposer au minimum 12 heures au r\u00e9frig\u00e9rateur avant de la d\u00e9guster, la conserver maximum 3 jours.<\/span><\/p>\n<p><span style=\"font-family: Arial; color: black;\">Au moment de d\u00e9guster cette terrine: La d\u00e9mouler, la couper d\u00e9licatement de pr\u00e9f\u00e9rence avec un couteau \u00e9lectrique en tranches d\u20191 cm d\u2019\u00e9paisseur, en compter 2 par personne, puis les dresser harmonieusement sur un plat de service.
