{"id":3138,"date":"2021-04-18T17:18:00","date_gmt":"2021-04-18T15:18:00","guid":{"rendered":"https:\/\/faugeron.net\/?p=3138"},"modified":"2021-04-17T17:35:41","modified_gmt":"2021-04-17T15:35:41","slug":"pains-au-lait","status":"publish","type":"post","link":"https:\/\/faugeron.net\/?p=3138","title":{"rendered":"Pains au lait"},"content":{"rendered":"\n<p>Pour 8 petits pains<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>500 g de farine fluide<\/li><li>275 g de lait<\/li><li>1 oeuf<\/li><li>50 g de beurre pommade<\/li><li>7 g de levure SEF<\/li><li>65 g de sucre<\/li><li>1 cuill\u00e8re \u00e0 caf\u00e9 de sel<\/li><li>Sucre en grains<\/li><\/ul>\n\n\n\n<!--more-->\n\n\n\n<p>M\u00e9langer les mati\u00e8res s\u00e8ches au robot (avec la feuille). Farine, levure, sucre, sel.<\/p>\n\n\n\n<p>Une fois que c&rsquo;est bien m\u00e9lang\u00e9, ajouter le beurre en plusieurs morceaux, puis l&rsquo;oeuf et enfin, petit \u00e0 petit le lait.<\/p>\n\n\n\n<p>M\u00e9langer plusieurs minutes \u00e0 la feuille, la pate deviendra uniforme, mais elle restera assez collante.<\/p>\n\n\n\n<p>D\u00e9poser la p\u00e2te dans un saladier pr\u00e9alablement huil\u00e9, et laisser monter en couvrant d&rsquo;un torchon humide pour \u00e9viter le dess\u00e8chement de la couche sup\u00e9rieure. Je laisse une nuit, ce qui me permet de faire cuire le matin pour profiter de l&rsquo;odeur pendant que je bois un caf\u00e9 \u2615<\/p>\n\n\n\n<p>Une fois que la p\u00e2te a au moins doubl\u00e9 de volume, en faire 8 p\u00e2tons en formant des boules \u00e0 la main (de la taille d&rsquo;une mandarine environ).<\/p>\n\n\n\n<p>Faire pr\u00e9chauffer le four \u00e0 180\u00b0 (chaleur tournant et chauffage par la dalle).<\/p>\n\n\n\n<p>Pendant le temps de pr\u00e9chauffage, laisser les p\u00e2tons re-gonfler l\u00e9g\u00e8rement.<\/p>\n\n\n\n<p>Avant d&rsquo;enfourner, m\u00e9langer un cuill\u00e8re \u00e0 soupe de sucre glace dans un demi vert de lait et \u00ab\u00a0peindre\u00a0\u00bb les pains pour faciliter la dorure. D\u00e9poser des grains de sucre dessus.<\/p>\n\n\n\n<p>Faire cuire 15 minutes (on peut mettre les 8 pains sur deux plaques \u00e0 p\u00e2tisserie en une seule fourn\u00e9e).<\/p>\n\n\n\n<p>Une fois cuits les pains sont excellents le jour m\u00eame.<br>Pour les garder je les emballe individuellement dans un papier d&rsquo;alu et les mets au cong\u00e9lateur.
