Peler et tailler 2 carottes en sifflets. Peler 2 gousses d&rsquo;ail, les fendre en 2, les d\u00e9germer puis les hacher finement.<\/span><\/span><\/p>\n<p style=\"margin-bottom: 0cm; color: #000000;\"><span style=\"color: #000000;\"><span style=\"font-size: small;\">Chauffer 1 cuill\u00e8re \u00e0 soupe d&rsquo;huile de p\u00e9pins de raisin avec 15 g de beurre dans une cocotte pas trop large, ajouter et faire suer sans coloration l&rsquo;oignon, puis les carottes en remuant bien avec une spatule en bois. Disposer ensuite les morceaux de queue de b\u0153uf sur cette garniture, ajouter 1 cuill\u00e8re \u00e0 soupe de concentr\u00e9 de tomate, les gousses d&rsquo;ail et 1 bouquet garni, bien m\u00e9langer, puis mouiller pratiquement \u00e0 hauteur avec 1?2 litre de bi\u00e8re blonde. Assaisonner avec du gros sel et du poivre du moulin.<\/span><\/span><\/p>\n<p style=\"margin-bottom: 0cm; color: #000000;\"><span style=\"color: #000000;\"><span style=\"font-size: small;\">Porter \u00e0 \u00e9bullition, couvrir et laisser mijoter de 1h30 \u00e0 2h00 sur feu doux, retourner les morceaux de queue de b\u0153uf r\u00e9guli\u00e8rement.
