{"id":998,"date":"2016-01-23T16:38:29","date_gmt":"2016-01-23T16:38:29","guid":{"rendered":"http:\/\/faugeron.net\/?p=998"},"modified":"2016-02-13T19:56:02","modified_gmt":"2016-02-13T19:56:02","slug":"brioche-2","status":"publish","type":"post","link":"https:\/\/faugeron.net\/?p=998","title":{"rendered":"Brioche 2"},"content":{"rendered":"<p>Pour deux brioches<\/p>\n<ul style=\"list-style-type: square;\">\n<li>250 g de beurre<\/li>\n<li>10 cl de lait<\/li>\n<li>500 g de farine<\/li>\n<li>18 g de levure fra\u00eeche<\/li>\n<li>100 g de sucre<\/li>\n<li>12 g de sel<\/li>\n<li>4 \u0153ufs (+ 1 pour la dorure)<\/li>\n<\/ul>\n<p><!--more--><\/p>\n<p>Pr\u00e9ferment : verser dans le bol 100 g de farine, le lait ti\u00e9di, la levure, m\u00e9langer avec une baguette chinoise ou le manche d&rsquo;une cuill\u00e8re. Rajouter le reste de la farine sur le m\u00e9lange et ne toucher \u00e0 rien. Laisser le pr\u00e9 ferment lever jusqu&rsquo;\u00e0 ce qu&rsquo;il perce le dessus de la farine.<\/p>\n<p>Une fois la lev\u00e9e faite, rajouter les \u0153ufs, le sucre et le sel.<\/p>\n<p>M\u00e9langer avec le crochet 5 min en vitesse 1 et 10 en vitesse 2. Filmer au contact et poser 8 heures au frigo.<\/p>\n<p>Couper la p\u00e2te en 2 pour 2 brioches, h\u00e9h\u00e9.<\/p>\n<p>Pour avoir une p\u00e2te bien a\u00e9r\u00e9e, il faut lui donner des <strong>tours simples.\u00a0<\/strong>\u00c9taler la p\u00e2te en un rectangle assez \u00e9pais (2 cm environ), la replier en trois.\u00a0La tourner d&rsquo;1\/4 de tour et recommencer une 3\u00e8me fois.\u00a0(\u00e0 3&rsquo;15\u00a0\u00bb dans la m\u00eame vid\u00e9o).<\/p>\n<p>Relaisser lever pendant environ 2h00 une fois que vous avez donn\u00e9 la forme \u00e0 votre brioche.
